The Fitzgerald Co., known as The Fitz, is a fast-casual restaurant chain in Spain built around burgers, ribs and food cooked over fire. There are 18 restaurants, half of them in the province of Valencia and the rest in Castellón, Alicante, the Madrid region and Zaragoza. Every one is open 365 days a year, and none takes reservations.
The brothers Carlos and Mario Gelabert started the chain in 2013, in a small place in Torrent in the province of Valencia. Alongside the restaurants, the brand now runs a clothing line with limited monthly drops, a podcast and a magazine.
The motto is quality, community and fire. The Fitz bets on people, inside the business and outside it: somewhere you can grow, learn and make mistakes on the way. There is training and there are real chances to move up, and they look for drive more than experience.
