La Martinuca is built around one dish, the Spanish potato tortilla, made to the recipe of a grandmother called Martina. It is a specialty tortillería, and the story it tells is that from the 1980s to the late 1990s, in the Madrid neighborhoods of Usera and Aluche, you could tell where Martina was by the smell of olive oil as she browned the potatoes.
Around the tortilla, the menu now has sandwiches, home-style dishes, specialty coffee and natural wine, and there is catering for companies and events. The eggs come from Galician hens, the potatoes from Navarre and the extra virgin olive oil from Jaén. The Italians made pizza known all over the world, and La Martinuca wants to do the same for the Spanish tortilla and Martina's recipe.
The company started in Madrid in 2021. In and around the city there are now two bars, in Salesas and at Madnum on Méndez Álvaro, with a third about to open in Chamartín, and delivery and takeaway kitchens in Chamberí, Tetuán, Pozuelo de Alarcón and Alcobendas. La Martinuca is in Barcelona and Valencia too, and on Ibiza and Formentera.
