About COFOCO

COFOCO, the Copenhagen Food Collective, opened its first restaurant in 2004 on Abel Cathrines Gade in Vesterbro. It was founded on the belief that a good meal should not be expensive. That one restaurant has grown into 20 restaurants and two hotels, all in Copenhagen: in the city center, Vesterbro, Nørrebro, Nordhavn and Islands Brygge. Together the restaurants serve more than 750,000 guests a year.

The kitchens cover Nordic, Italian, French, Mediterranean, South American and Japanese food, under names such as Høst, Vækst, Les Trois Cochons, Oysters & Grill, Scarpetta and Jah Izakaya & Sake Bar. The two hotels are Coco Hotel and Bella Grande. COFOCO has built a six-hectare solar park that produces more solar energy than the company uses, and it aims to make sustainability, animal welfare and organic produce a given.

COFOCO puts weight on collaboration, from the floor to the kitchen. There are training programmes inside and outside the company, managers are taught responsible leadership, and the restaurants get together socially through the year. Benefits include a pension with health insurance, discounts at the restaurants and free group training.

In short

  • Staff reach anyone in the group through the chat, without needing their phone number. Work conversations stay in the app, so people can put it down when they are off.

  • Employee surveys run in the app, where they are easier to reach, so more people answer them and the answers give a picture of what employees think.

  • Courses for new waiters and occasions like the DHL relay are posted as events people sign up for, and everyone signed up hears when something new is posted.

A tool for reaching everyone

Kira Olsen started at COFOCO as a waiter at Oysters & Grill. She waited tables in other parts of the group, became a supervisor, then a restaurant manager, and six years in she was operations manager.

COFOCO was 18 restaurants and two hotels at the time, all of them different. What holds them together is that people say when something is wrong, early enough for it to be fixed.

One of the main things COFOCO uses the app for is reaching people across the group. Before, getting hold of someone directly usually meant having their phone number. Now there is a chat, so none of it depends on having a number.

What might have been a challenge in the past was the fact that you always need to have someone's phone number in order to get in touch with them directly. Here it's great that there's a chat function, so you can tie it all to work. And when you're not at work, you can just put it down.

Surveys, courses and the DHL run

All the information is in one place, so it is quick to find, and when someone is missing something it is easy to point them to it.

The employee surveys run in the app too, with its survey function. That makes them easier to get to, more people answer, and COFOCO can read what its employees think.

Events cover both work and the social side. The courses every new waiter has to take are posted as events. So are larger occasions: the year all of COFOCO ran the DHL relay, everyone signed up through the app. Once people have signed up, they get a notification every time something new is posted on the event.

That's the simplicity of it, and it's all in one place. That's also why I think it works well for us, and I also think it is why people use it a lot. Because it's pretty straightforward, both to find the information you need, but also to use it for communication.

Simple enough to use every day

It gets used because it is simple: information is easy to find, and the same app is how you reach a colleague. A restaurant group is hard to run if people cannot get hold of each other when they need to.

Staff have joked with new colleagues that the app could almost pass for social media. It is for work, but not everything posted there is strictly about work. Colleagues who find out that a friend has no Danish phone number keep talking in the chat instead of adding another app.
