Frederik Darger Johansen and Nicolai Suwinai were 21 and 22 when they started OLIOLI in 2017. Their vision was simple: to create joy between food and people. The poké bars serve food the founders call Asian and Scandinavian, and to anyone who does not know the concept, they explain a bowl as a sushi salad. Working life is long, they write, so it might as well be fun.
Today there are OLIOLI bars across Greater Copenhagen, in Vesterbro, Østerbro, Amager, Vanløse, the city center, Lyngby, Hellerup and Rødovre, as well as at Copenhagen Airport and in the Tivoli Food Hall. The company also runs a food truck and does catering.
OLIOLI wants to be the best workplace in Denmark for young people. Two hundred young people work there, and the job they give themselves is to keep it fun even when it is busy. Most of its staff got their job by sending an unsolicited application. For those who want to lead, there is leadership training with EK and Asnæs & Vangstrup, and one employee is taking an academy degree in leadership through the company.
